Jon Donaire Desserts: Improving Bakery Automation
Like many commercial bakery producers, Jon Donaire Desserts acquired each of its dough mixers in response to incremental growth over the course of several years. By 2005 the company was using three dough mixers to produce 40,000 cheesecakes each day at its Santa Fe Springs plant. Although the same manufacturer supplied all the mixers, each one used a different control system and electrical panel — and each operator had to receive training on them all.
To minimize the training and maintenance needs for the various equipment, Jon Donaire contacted MAVERICK Technologies. After evaluating the facility's operations and technology preferences, MAVERICK retrofitted the three mixers (and a fourth that had not been operating) with a standard electrical panel and HMI. A team of five engineers provided complete services, from PLC programming to training on the new systems. As part of this work, the team identified a mechanical issue that prevented the systems from becoming completely automated. Once they corrected the issue, the automation was successful. MAVERICK completed the job in three months, and the plant has experienced a significant increase in efficiency as a result.
